Directions

Prepare Easy Cornstarch Crepes according to the directions in chapter 2, however, instead of a 6” non-stick pan, use a 9” pan.

Heat a large skillet with some Olive oil on medium heat. When hot, add shallots, sauté until translucent. Add mushrooms and continue to sauté for approximately 6 minutes, stirring occasionally. Sprinkle in salt for flavor.

Stir in tomato sauce and cook for an additional minute, and then reduce your heat and stir in the sour cream. Cover to keep warm.

In another non-stick skillet, melt butter over medium heat. Fry your eggs over medium individually and set aside carefully, without breaking the yolk, keep warm.

Place your crepe on a plate, spoon in the mushroom mixture in the center of the crepe, and then add a fried egg on the top of the mixture. Fold in the edges of the crepe to form a pocket. Serve the crepe seam side down and add additional sour cream or fresh herbs.
